1 egg, lightly beaten 1/3 cup canned or mushroom stems and pieces, drained and chopped or use fresh mushrooms. 1/4 cup seasoned fine dry bread 2 tablespoons milk 1 teaspoon dried Italian seasoning 1/4 teaspoon salt 1 pound lean pork 8 1/2-inch-thick slices French bread 1 8-ounce can pizza sauce 1/4 cup sliced pitted ripe olives (optional) 1/4 cup shredded mozzarella cheese
In a medium bow, combine egg, mushrooms, bread crumb, milk, Italian seasoning, and salt. Add ground pork mix well. Shake mixture into four 3/4-inch-thick patties.
for a charcoal grill or campfire coals, place patties on the grill rack directly over medium coals. Grill, uncovered for 14 to 18 minutes or until done (160 F), For once halfway through grilling. Toast bread slices on the grill.
For a gas grill, preheat grill. Reduce heat to medium. Place patties then bread slices on grill rack over heat. Cover and grill as above.
For sauce: In a small saucepan, combine pizza sauce and olives; heat through. Serve between bread slices with sauce and cheese. Makes 4 servings.
Grilled Flatbread plum Dessert

Dessert is another very important part of camping-food-ideas. The sweet,tender plums are great for grilling. They stand up well to high heat, and their flavor is magnified when heated. This yummy dessert is a great recipe.

For a gas grill, preheat grill. reduce heat to medium-high. Place plums on the grill rack over heat. cover and grill as above. Slice plums when they are cool enough to handle.
In a small bowl, combine mascarpone cheese and the 1 tablesppon of honey. Spread mascarpone mixture over browned side of a flatbread. Add plums and sprinkle with almondsand ginger before returning to the grill. If desired drizzle with additional honey before serving. cut into wedges. see photo above.
Grilled Pound Cake

My camping-food-ideas would not be complete with out a good dessert like gas Grilling pound cake with chocolate sauce.
2 Tablespoons boiling water 1 tablespoon instant espresso coffee powder 3/4 cup whipping cream 1 tablespoon light-color corn syrup 8 ounces special dark baking chocolate or semisweet chocolate 1 16-ounce loaf prepared or frozen pound cake, thawed 1/4 cup orange juice or 2 tablespoons orange liqueur 1 cup whipping cream, whipped, or 2 cups frozen whipped dessert topping, thawed 1/2 cup pistachio nuts, chopped
In a extra-small bowl, combine the boiling water and the espresso powder. set a side
For chocolate sauce: in a small heavy saucepan combine
3/4 cup whipping cream and corn syrup. bring to boiling; remove from heat, stir in the espresso mixture. add chocolate all at once. let mixture stand, covered for 4 minutes. whisk untill chocolate is melted and mixture is smooth. cover to keep warm.
Cut the pound cake into eight 3/4-inch-thick slices. poke each slice several times with a fork. drizzle orange juice evenly over slices.
For a charcoal grill or campfire, place cake slices on the grill directly over medium -hot coals Grill, uncovered , for 2 to 4 minute or until toasted and heated through, turn once halfway through grilling.
for a gas grill, preheat grill. reduce the heat to medium-high. place cake slices on the grill rack over heat, grill, uncovered, as above.
Serve grilled cake slices with whipping cream, pistachio nuts, and chocolate sauce and enjoy the recipe.
Summer Berry Cooler
Here is a nice refreshing summer berry cooler to sit back an enjoy while you are relaxing at your camping site.
2 Cup sliced strawberries 1/2 cup raspberries 3 tablespoons frozen apple juice concentrate, thawed>br>1 12-ounce can regular or diet lemon-lime carbonated beverage ice cubies whole raspberries
In a blender, combine strawberries, the 1/2 cup raspberries, and the apple juice concentrate. cover abd blend untill smooth or just thoroughly mix by hand. Pour mixture through a sieve into a small pitcher, pressing the berries with a masher or the back of a spoon to extrat all of the liquid. discard pulp.
Slowly pour lemon-line beverage into berry mixture: stir this recipe gently.
Serve in glasses over ice cubes.Garnish each serving with a small skewer threaded with additional raspberries. Makes 4 sevings. You can add this yummy recipe to your camping-food-ideas.
